Cheech’s Chorizo Chili
1/2 c. olive oil 1 c. chopped onion 1 diced bell pepper 8 oz. sliced mushrooms 2 lbs. Lou's Chorizo sausage 1 c. ketchup 2 - 8 oz. bottles chili sauce 1/2 c. hickory BBQ sauce 2 cans Great Northern beans 1 can red kidney beans 1 tblsp. chili powder
Salt & pepper to taste Heat saucepan to medium. Sauté onion, peppers and mushrooms in oil. Add Chorizo and brown. Add remaining ingredients and simmer for 30 minutes.
Top with cheese and serve. Also great over pasta.
