Rapini with Lou's Gourmet Sausage
Purchase one bunch of Rapini and a pound of Lou’s Gourmet Hot or Mild Italian Sausage at your local grocery store. Fill a six-quart pan ¾ full of water and bring to a boil. Cut off about one inch of the Rapini’s stems. Add 2 oz. Of salt to boiling water and place rapini into the water stems first. Let boil for five to six minutes, when rapini has finished boiling strain all water and set aside. Cut Lou’s Sausage into one inch pieces and fry them on a skillet until pink is gone and then drain. Remove sausage from skillet. Mince one large clove of garlic. Place 2 tablespoons of olive oil, rapini, and garlic in skillet and cook for approximately one minute. Add cooked sausage and cook for two more minutes tossing rapini and sausage together. Place on serving platter. Feeds approximately 4-6 people. A delicious side dish!
