Lou’s Gourmet Sausage, Peppers & Potato Casserole

Ingredients: Three pounds of mild or hot Lou’s Gourmet Sausage link style; three good size green peppers; two large red peppers (or add any extra peppers that suits your taste); and one pound of little red potatoes.

Clean peppers and potatoes. Cut peppers into strips and potatoes into quarters. Cut sausage into 3-4 inch pieces. Preheat oven to 350 degrees. Place sausage, peppers and potatoes in a casserole container. Drizzle olive oil over the top. Cover the dish and cook for approximately 45 minutes. Remove cover after 20 minutes. Check to make sure the sausage is no longer pink inside. Feeds a family of four to six. Mouthwatering!
